The chamber holds 1,010 square inches of grate. The fire box is rated for 3.1 pounds of charcoal. Those two figures sit strangely together on one appliance.

So this is not a grill you load and walk away from. It is a fire you keep. The question is whether it gives you enough control to make that work worth doing.

First Impressions of the Char-Griller Competition Pro

Assembly is a long job, and it starts with a heavy box. Legs, axle, shelf, grates and fire box all bolt together. Char-Griller publishes an owner’s manual for the 8125, and you will read it properly. Set aside an afternoon and a socket set.

End to end it runs 66.3 inches, with 52.8 inches of height. The fire box hangs off one end like a bolt-on afterthought. It is nothing of the sort. That box is the reason the barrel is shaped this way.

Everything is black powder coat over steel. The front shelf carries utensil hooks, which sounds like nothing until your tongs are greasy. Wheels sit under one end, so the other end gets lifted.

Everything the manual leaves out shows up in the first burn. Light a chimney, tip it into the fire box, crack both dampers open. Smoke pulls across the chamber and out the far end. Chicken thighs on the cool grate come off gold and clean tasting.

Heat and cooking performance

On an offset the grate is not one cooking surface. Heat enters at the fire box end and leaves at the other. The near end runs hot while the far end runs cool. That gradient is the tool, not a fault to be corrected.

Char-Griller publishes a heat range of up to 450°F. For a charcoal barrel that is a modest ceiling. It reads as a smoking figure rather than a searing one, and the shape agrees. This cooker is an offset that grills, not a griller with a box attached.

Two dampers give you the only real controls on the machine. The fire box vent decides how hard the coals burn. The chimney damper decides how fast that heat crosses the chamber. Choke the chimney and the smoke turns sour instead of sweet.

Wind matters here more than most owners expect. The fire box sits out on one end with its vent exposed. A gust straight into it will spike the coals and drag the chamber up with them. Parking the box away from the prevailing wind steadies a whole afternoon.

So a cover and a dry spot stop being optional extras. Ash left sitting in the barrel holds damp against the floor. Grease and moisture together are how these cookers actually die. None of that is ever a warranty claim.

Running costs, upkeep and value

Prices on this one move about. We saw it around $349.97 at Amazon on 2026-07-26. Char-Griller showed $329.99 and Walmart $399.61 the same day. The brand’s own page lists it at $449.99.

Charcoal is what you actually spend, and here it is a rhythm. The fire box is rated to hold 3.1 pounds of charcoal. A long cook therefore means feeding it, repeatedly, on a schedule you set. Keep a second chimney lit alongside and each refill costs you nothing in heat.

Cleaning is honest work rather than hard work. Ash gathers in two places, so both need emptying before they cake. Expanded metal brushes down quickly while it is still warm. Grease and dust build fastest in the throat between the box and the barrel.

The dampers want a wire brush now and then, because a gummed vent lies to you. A vent that reads half open and behaves like a closed one will ruin a cook. Clearing them takes a minute and saves a lot of guessing.

Against all that, what the money buys is a genuine offset. You do not buy the fire box separately. At this price most barrel grills hand you a lid and a shelf. Char-Griller hands you the geometry.
